Easy Enchilada Casserole

So far I have not found a good Mexican restaurant here in Tucson, but thankfully it is easy to make Enchiladas, so Kevin and I are not in withdrawals...yet. 

Sometimes when I need something super easy and quick, I make my East Enchilada Casserole.

Very cheesy, very rich.


1 can of Las Palmas Green Sauce (they aren't paying me to say this, but if they want to I will take it!)
1 can of cream of chicken soup
Lots of shredded cheddar cheese
1-2 chicken breasts {I use raw/frozen}
4 Tortillas


Take 9-13 glass pan and pour a little of the green sauce to line the pan. Put two tortillas over that, then, spread can of cream of chicken soup on the tortillas.
Chop up the chicken breasts and sprinkle them on the cream of chicken soup.

Sprinkle shredded cheese over the chicken {or heavily layer it if you are a cheese-o-holic like me.} Then, pour a majority of what is left of the sauce and cover with two tortillas. Pour the remaining green sauce on top and sprinkle with cheese.

Then cover pan with foil and place in oven for 40 minutes at 400 degrees. If you want less saucy enchiladas, then take the foil off at 30 minutes.

  3. I have to admit I'm kind of surprised you haven't found good stuff in Tuscon? I haven't been I'm just thinking it is Arizona!!?? Here in Portland we can't seem to find GOOD stuff either (a few places that "will do" when we have a craving and don't want to cook). And our homemade enchiladas are always green sauce too.
