Pesto Panini

I love paninis. They are easy to make and always very good. 

Kevin and I had some friends coming over for lunch the other day, so I decided to whip out George (Foreman grill) and try my luck at some Pesto Chicken Sandwiches.

First I got two chicken breasts. This made 5 sandwiches for me. 
I sauteed them in olive oil and basil leaves.
I had some sourdough bread with miracle whip and pesto on it and slapped those chicken strips on there!
Kevin liked his chicken chopped up. It is whatever your preference is.
I would have added some tomato slices, but I let my tomatoes go bad.
Then add cheese of your preference. I added brie {love} and some shredded cheese.
Press it in the panini grill (or with George, he works just as well!) and there you go!

  8. I'm the same way about posts without pictures! That last one is hilarious. My favorite lately is this one. Mostly because I'm about that lazy. :-)
    Also, favorite panini combo here is roasted red peppers, spinach, and mozzarella. Sprinkled with some italian seasoning. :-) I'm going to have to try the pesto chicken one! It looks delicious.

  16. Love the picture of Sally in the last picture. I seem to remember having a similar reaction to maths problems: "It is 7 kilometres from Hawthorn to Melbourne. David leaves his house in Hawthorn and drives at 100 kilometres per hour. How long will it take him to reach Melbourne" ... and there'd be me thinking "how the hell is he managing to get to a 100 on Riversdale Road?"

  17. This sounds delicious! I love paninis. I've made them with cranberries and cheese before, but unfortunately, I cannot eat cheese anymore...so those are a distant memory. :( Anyway, something about them screams fall and winter to me.
