Tuesday Topics

So those of you who enjoyed the Ten Day You Challenge, wanted some more Tuesdays with awesome prompts. So I decided to make Tuesday Topics! They won't all be the traditional 10, 9, 8, 7...etc like the first set of 10 Day Challenge prompts, but they should be fun all the same. (Some of them have specific questions that I had all sorts of fun coming up with! So excited!!!)

And to bridge the gap, why don't we start back at Ten Things you Would do with a Million Dollars.

That is the first prompt!

Fajitas

So in an effort to make good on my last post, I made dinner for Kevin last night. I had Saturday and Sunday off of work and it was amazing! We made some changes to the house (that will get posts of its own soon!) and watched the Broncos win! In addition, Ohio State, Arizona, and the Cleveland Browns won! Great football weekend!

Anyway, onto the dinner. Mexican food. That I can do. And I do a pretty darn authentic job...ifidosaysomyself!

Fajitas were the name of the game (in case you couldn't tell with my criptic blog post title) and there were yummy! I actually attempted to take pictures with my camera phone so forgive me!

First you start before the Denver game and get your hubby to pour you a glass of wine (This is an important first step unless you are preggers!)

 Then you grab your meat and marinate it. I used Milanasa. (You could use skirt steak too) It is a thin cut of meat. If I wanted to be really authentic I would have gone to a Mexican Butcher and gotten it cut properly, but for a Sunday night, Wal-Mart will have to do!
Here is a special secret about marinating meat. Marinate it at room temperature instead of in the fridge. It happens faster. 20-30 min and you are good to go!

Then you cook it, sit it to the side, cook your vegetables and then for good measure add the meat for the last little bit (to make sure that meat is still warm!)

Make some Guacamole and have cheese on hand. Add it all to a warmed tortilla and add some sour cream and you are good to go!


For the steak:
  • 1 tablespoon of lime juicec
  • 1 teaspoon granulated garlic
  • 2 teaspoons cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 2 teaspoons salt
  • 3 tablespoons vegetable oil
  • 2 1/4 pounds steak trimmed of fat (Milanasa has no fat to trim!)
For serving:
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 tablespoon oil
  • Pinch of salt
  • Flour tortillas, warm
  • Sour cream
  • Shredded Cheese
  • Guacamole: Remove avocado from skin and mash with a fork in a bowl. Then add a splash of lime juice, a dash of salt, and some diced tomato. Mix with the avocado and you got it!

Directions:

  1. In a small bowl, whisk together garlic, cumin, paprika, chili powder and salt. Stir in oil and lime juice to make a paste. Rub steak with paste and place in a baking dish. Let sit at room temperature for about 20-30 minutes.
  2. Preheat a skillet over high heat. Grill the steak for 2-3 minutes each side. Milinasa is so thin cut that it takes a minute on each side, but I don't want any of you eating undercooked meat. Use your judgement... Then, transfer the steak to a cutting board and let sit.
  3. Toss the peppers, oil, and a pinch of salt in that same skillet (the less dishes the better) turning a few times during cooking, until the vegetables are softened.
  4. When steak has rested, about 5 minutes, thinly slice it against the grain on a diagonal.
  5. Now eat! And go Broncos!

Life and Balance

Wow, it feels like too long since I have posted. I have been super busy with work, work, and more work. But because I worked a lot I got Thanksgiving off! Heck yes! I also spent this weekend (when I finally had some time off) working on the new house. Pictures and info to come soon! This is the first time this week I have even been able to sit on my computer for longer than 5 minutes with internet access! 

Therefore, balance in life has been something I have been thinking about. A lot of people have been posting about this subject, so I know I am not alone in feeling a little warn, confused, etc...

I think that we as woman, we are amazing. We truly do a lot. We need acknowledge that. As a woman, there are some pretty amazing things that I do and there are many things that I feel like I should do and I feel like I need to balance those. I know my situation may not be ideal, but I know that if I learn to balance it now, one day I will be where I want to be.

I need to balance being...

A wife. My husband is my rock. He has been with me and will be with me my whole life. We are excellent together. He values me and I value him. Despite some beliefs, I believe in traditional roles as a wife. I believe in a clean home and taking care of my husband. Before I had a job, I would make sure Kevin came home to a home cooked meal on the table. I would usually be able to get his lunch packed for the next day. Now that I work evenings, that has become harder. I am working to be better at that. It has been easier for me to start with lunch, and the other day I found a recipe I could make ahead and have him throw in the oven for dinner. (I need more of those if any of you have recipes like that!!) It's important for me to know that Kevin is taken care of. That he doesn't have to worry about food after work. I want him to be able to come home and unwind. Kevin most definitely does not expect this out of me. I do it because I enjoy to know that I am putting food in my husband's belly. Especially when it tastes good (because sometimes it doesn't). Again... its the whole traditional thing that I so strongly believe in.

A nurse. I work in the Acute Care Unit. I work 8hr days (although I would rather it one day be 12hr days). I work evening shifts. My husband wakes up and goes to work. I wake up and he is gone. I get home and he is ready to go sleep. It is not ideal, but it is what we need right now for the future. I supervise other nurses, I handle many patients and their family. I work with doctors to ensure the best care possible. I am still learning so this makes it hard.

A businesswoman. I firmly believe the key to making any marriage work is being able to work together like business partners. Yes Kevin and I love each other, but love can do some crazy things. We have to be able to be business partners to be able to make rational and capable decisions for our family. He keeps our books, but I okay every decision. He respects me enough to go through me and we always work out every detail of our financials together. We make our decisions together.

A blogger. While this is still a hobby of mine, I hope to continue for years to come and make it memories for my family. I never feel or want to feel obligated to blog. My blog is my personal space, a hobby, but it's also something that I see as a job. A fun job that I hope never ends. And a job that I do not get paid for. But that is okay with me for now.


Me. If we are going to be talking about time management, I have to take time out to be me. Yes I am always me, but me time means the time it takes me to do simple things from brushing my teeth and showering, to getting my hair done. It takes time to be me! I also have to take time to read or watch TV because those are things little ol me wants and likes to do!


A sister. I am probably not the best sister ever, but I love and will go to the moon and back for my sisters. I try to make an effort to call them, text them, and check in. Let me preface this by saying that my sisters are two women who are not materialistic, but I love thinking of gifts for them. My middle sister just turned 21 and I loved how her face lit up at the gift that I got her. I love them to pieces. I also have a sister-in-law whom I now am lucky to count as family.

A daughter. I love my parents. They made me into the person that I am today. I also try and call them as much as I can and visit when I can. I could never repay them for all they have done for me and could never put into words how much I love them. I am blessed to have a good relationship with them. I also am lucky to have in-laws who have graciously welcomed me into their family and make me feel like their own.


A granddaughter, niece, and cousin. My family may live 3000 miles away but I would do anything for them. I don't get to see them all too much, but I do think of them often. I am also lucky to be counted as family within Kevin's family.


A girlfriend. I haven't made many girlfriends here. They tend to move away... ;-). I have girlfriends in Las Cruces that I try and keep up with and one of my good girlfriends in Africa. But I think it is definitely hard not to have a girlfriend to go out to drinks or dinner with or just to hang out with. 


One day I will be a mother, an aunt, and a caretaker. I hate to think of that last one, but I know that these are three roles that will be the biggest blessings, time consuming, and something all the preparation in the world may not prepare me for.


A mistress. ONLY KIDDING! Sorry guys, I had to lighten the mood somehow!!!

There are the many roles I need to learn to balance. I know this is hard, and that there are areas of improvement. I know that I work hard and that is the best I can do right now. I make sure that we meet our needs and our wants in our lives. 

This is my life right now. Sorry for such a long post, but sometimes it feels good just to write for days and not edit a darn thing!

My Sisters

Last night I not only slept wrong on my neck (ugh it really hurts!), but I also had a dream about my sisters! It makes me realize I really miss them. I am going to reminisce about them here!

Although we have the distance I hope that as we grow older, we grow closer together. I love her more than she knows.

New Shoes

So sorry that I haven't posted since Wednesday! I have been super swamped working some overtime and finally am now officially a proud homeowner. (More on that to come) So for now I ask all you awesome people for some advice:

I need new tennis shoes. All of mine are old and gross, and I wear tennis shoes to work everyday. I thought about browsing Pinterest, and it worked! I found some great looking shoes, but the problem is they were all images that didn't link back to where I could buy the shoes. So now I am lusting...



I prefer Nike (since I have a narrow foot) but I am up for anything.

Pesto Panini

I love paninis. They are easy to make and always very good. 

Kevin and I had some friends coming over for lunch the other day, so I decided to whip out George (Foreman grill) and try my luck at some Pesto Chicken Sandwiches.

First I got two chicken breasts. This made 5 sandwiches for me. 
I sauteed them in olive oil and basil leaves.
I had some sourdough bread with miracle whip and pesto on it and slapped those chicken strips on there!
Kevin liked his chicken chopped up. It is whatever your preference is.
I would have added some tomato slices, but I let my tomatoes go bad.
Then add cheese of your preference. I added brie {love} and some shredded cheese.
Press it in the panini grill (or with George, he works just as well!) and there you go!

So onto my picture. Every year my mom has put together a Christmas card for our family. It is always of me and my two other sisters. This year we finally convinced her to put the WHOLE family in there. 2012 has been a great year and a bad year for my family, but we made it through together. I am sharing a picture from our photo shoot (oh those are always fun...I have a whole post on that for later). This one didn't make the card, but was a good one as well!

Game Day

Today is game day! I am excited because I finally have the day off to watch football! However, unfortunately, the Broncos do not play until tomorrow. Boo. Of course I work tomorrow. I will be wearing some ill fitting scrubs, but I could dream about what I would be wearing seeing the Broncos winning!

10 Day You Challenge: 2 Songs

These challenges have been amazing! 

I love music and this was the hardest one for me to do. There are soooo many good songs! I need more direction on where to go with the songs! 

So I drew randomly out of my brain on what direction to with these two songs: would they be two songs you have never heard of--but need to, two classic songs, two rock songs, two country songs, two guilty pleasures...yeah you get the picture? 

So I drew two songs I have on repeat right now. I kinda surprised myself on this one.

5 Things That Won't Happen This Year

I worked all weekend, Kevin is leaving me for his first work trip for a couple days, Denver lost, and its Monday. Sorry for the kinda pessimistic post. And yes I know a lot of you guys have your husbands away for longer and more often, but I am a kinda spoiled and already don't like it.

So with that said, here are 5 things that I realized aren't going to happen for me this year.

1. Becoming a domestic chef is not in the cards for me in 2012. Cooking for two is kinda a pain and as much as I dream about cooking up gourmet healthy meals every night, the thought of slaving in the kitchen isn't appealing to me. Oh plus I work evenings so making dinner for Kevin is a hard thing. I need some recipes that I can make, freeze, thaw, and that he can heat up. Any ideas? The easier the better I say!

2. I love the new house we bought, but apparently people don't do hardwood floors often in the desert. I will have to wait for my future dream home for those!
3. I love being involved in charities but getting involved in a new city can be hard. Looks like I have missed the time for the charities I wanna do here, but I will start next year!!

4. Getting all cute and pinterest-y is not in the cards as well. I will be between houses and heck I work Halloween and I am sure a couple of other holidays. All those cute wreaths and pumpkins and trees and other decor will have to wait for next year. 

5. Buying all the beautiful fashion clothes that I want. (uh yeah, what was my last post about?!) Most of my money is going to that house that I bought :-) and then the rest is going to scrubs! Those are more expensive then you would think! 

6. Oh wait I said 5. OH WELL. I won't be getting a puppy. As much as I love commenting all the time that I want a puppy, it wouldn't be fair for him or her. Maybe next year!

The Lion King 
This is one of the few movies that has ever made me cry. The music, the story, everything about it is perfect.

 The Blind Side 
One of the best stories and well acted movies in a while. I love it and can watch it over and over again.

 Father of the Bride 
I swooned over the home they lived in. It was the first movie that even made me dream about a wedding. Everyone in the movie was perfect! I can watch this movie over and over. My little sister we call "Bubba-La" after that movie. Martin Short was so funny!

Weekend Update

Thank you to everyone who read and spread the word about Childhood Cancer Awareness Month! I have one more post on it, but you have to go over to Mary's blog to read it (and all of her other posts, as I am sure you will fall in love with her!)

Other than that, I went home to visit my family this weekend. Kevin and I told no one we were going home just so that we could spend the time with just our family. My sister turned 21, my mom turned.....25 ;-), and Kevin's grandparents were down visiting from Colorado. It was much too short a visit.

I painted my nails, and then shot my old 22. Yeah I know how to handle myself!
Broncos won! YAY! I won in my fantasy leagues! YAY! Now I have to work today...eh!
