Tiffany's Baby Shower

My BFF in the blog world is having a beautiful baby boy!
So today is our surprise virtual baby shower for her!

I made her some brownies!
I am going to call them:

Baby Whisperer Brownies

In addition I reminisced about all the wonderful meals she loved and we have shared...
from the first ever bruschetta and sangria...to the biscuits and gravy/milkshakes...to deep dish pizza!

We have had a lot of good times and good food!
I even tried to prep her for little Elliott!
Here are a couple pics of us. Elliott was thought of in one and in the other two of them!




I am so lucky to have met her and become her friend!
Elliott! I hope you like chocolate because Auntie Lauren sure does!
This is an easy recipe for mom to make why she is chasing you around!

Ingredients
Grab a box of brownie mix
1/3 cup water
1/3 cup vegetable oil
5 eggs
3/4 whipping cream (I used a sub of milk/butter)
2 cups andes creme de menthe chips
1/3 cup sugar
Chocolate Frosting (make your own, buy a tub, buy the brownies with the frosting, however you want to do it works!)

Directions
Grease the bottom of an 8x8. Pre-heat the oven to 350.
Make the brownie mix using the water, oil, and two eggs.
On the stove, heat the whipping cream (if your husband hasn't accidentally spilled it all over the entire fridge...I would really recommend going to the store if he has done this, because Pinterest telling me I could sub the milk and butter did the trick, but wasn't as good) and 1 heaping cup of andes mints. Stir constantly until everything is melted.
Let cool slightly.
In another bowl beat three eggs and sugar on medium speed until foamy.
Stir in the chocolate mixture.
Pour mixture into the pan.
Bake for 45 min or until top is set (longest part ever!)
Cool completely for about 1 hour (okay this is the longest part ever!)
To take your mind off of it, eat some of the rest of the andes mints in the bag. Then once the brownies are cool, frost them and sprinkle the rest of the mints over the top!


Serve at room temp or slightly chilled (my fave)! So yum!!
Maybe next time put some mint extract in the frosting? I really love mint...

Perfectly yummy, chocolatey, and hard to keep long enough to write a whole post!
