Amazing Appetizers

This weekend was awesome and sans pictures!

Saturday we went tubing down the Salt River. Four hours of fun in the sun sans phone with friends was what I needed in this hot AZ weather!

Sunday was a lazy day after church. Kevin did some grilling for dinner and it was perfect!

I also did an appetizer night for dinner! 
It is tradition for my family to do appetizers for dinner on Christmas Eve. I have always loved that tradition. I have way to many great appetizers recipes. But I end up sticking with the same ones on Christmas Eve, so I decided to do totally different ones this time around.

Christmas in July so to speak...

First up...

Apple Swiss Flatbread

Ingredients:
Flatbread
Apple
Olive Oil
Honey
Swiss Cheese Slices

Directions:
Drizzle some olive oil onto flatbread. Grill or bake for 2-3 minutes.
Add swiss cheese slices and apple slices to the flatbread and then bake/grill until cheese is melted.
Let cool for 2 minutes and then drizzle with honey.
Then enjoy!


Border Sandwiches

Ingredients:
1/2 loaf of French Bread
Turkey slices
1/4 cup mayonnaise
1/4 cup sour cream
1 pinch of cumin
1 pinch of chili powder
Sliced or shredded cheddar cheese
Avocado (sliced)
Tomato (sliced)

Directions:
Slice french bread.
Mix mayo, sour cream, cumin, and chili powder. Spread onto french bread.
Add cheese. Then turkey, and then tomato, and avocado.
Bake at 350 for 10-15 minutes.
Made nine slices


Ready for my favorite app of my day?
Whipped Feta Bruschetta

Ingredients:
1/2 loaf of french bread
Whipped feta (see recipe below)
Cherry tomatoes
Dried Basil

Directions:
Bake or toast the french bread ever so slightly until crisp.
Spread the feta and sprinkle with basil.
Place tomatoes in sun or bake for a couple of minutes.
Cut tomatoes in half and place on bread.
Done and Done!!


Oh now onto that amazing whipped feta.
This recipe will make more than you will ever need but I could eat it with a spoon so extra is fine by me!!

I used 12oz of crumbled feta cheese and whipped it in my food processor with 4 oz of cream cheese. The most important thing to remember is that the cream cheese and feta really need to be at room temperature otherwise it will not whip right!

With a glass of wine it was all I needed!

  4. Me and my mom always joke that we can eat just an entire meal of appetizers but we've never actually done it. I'm going to show her this post and these recipes and maybe we'll have an appetizer meal soon!

    I love having people over and just doing appetizers. It's fun changing it up once in awhile.
