Fruit Pizza

Ever since I can remember, my mom has made fruit pizza on 4th of July. It is surprisingly one of this chocoholics favorite desserts!

I never understood why we only had it on 4th of July as a kid...I mean it seemed like an easy enough thing to make, and mom would even let us help decorate! 

And you know if I am replicating it, it is easy.
I know there are many of these everywhere online, this is not a genius recipe, but I thought I would share the recipe I have adapted from my mom.




My mom made the recipe easy to remember by just telling me one to one ratios on brick of cream cheese to cup of powdered sugar. This year I tried granulated sugar and it was just as good. I used less granulated sugar than I would have used powdered sugar and it tasted the same. I am just going to go with less sugar is less sugar and that makes it healthier right?

Sorry guys, not into healthy or anything, but if I am going to eat dessert with fruit on it, it better be good for me!! ;-)

Fruit Pizza 
(This year's version)

Ingredients:

For the cookie:
1 cup butter, softened
1 1/2 cup of sugar
2 egg
2 1/2 cup of flour
3 teaspoon baking powder
1/2 teaspoon salt

For the icing:
2 (8 oz pkgs) cream cheese
1 cup sugar
4 teaspoons vanilla extract

For the topping:
ALL the fruit you can find!

Directions:
Mix together butter and sugar until smooth, then mix in the eggs. Combine that with flour, baking powder, and salt.

Once blended, press the dough into your pan.

Bake that dough for 16-18 min at 350 degrees.

Blend together your cream cheese, sugar, and vanilla extract.

Spread it onto your cooled cookie.

Arrange fruit onto your cookie and then chill!

This yields a 11x16 huge pan as you can see above, but you can cut this recipe in half for a pizza sized cookie. Might be better if you aren't feeding lots of people.

I guess I know why you only make it once a year. SO ADDICTING!
But healthy right!?

  6. I made something similar to this last year and it was delish! I wish I could have thought to make it on the 4th, but I'm definitely going to make this before the summer ends! :)
