Zucchini Pizza Boats

How was everyone's weekend?! Good I hope! Mine went by way too fast. I actually don't have very many Mondays where I wake up and am truly heartbroken that it is not the weekend. But here we are on one of those Mondays. At least I attempted some exercise and ate some healthy pizza. A healthier form of pizza? Sign me up!

I was skeptical to try these especially since the first time I attempted a healthier form of pizza---I utterly failed. (Cauliflower crust did not work for me when I tried it!) So I decided to try Zucchini Pizza Boats. I intended the night that I made it to make it only for me. My husband is a pizza snob and was going to have regular pizza for dinner that night.
Good thing regular pizza makes such good leftovers and good thing I made enough for two people!

It is incredibly easy to make. Everyone pins them on Pinterest, but it is more for the idea. Trust me, you don't need a recipe for this, I am sure you can surmise it all yourselves!

The prep is quick. You slice the zucchini in half and I took a paring knife and sliced the middle out. I then deep fried the middle in panko crumbs because I cannot waste! I mixed the panko with some parm cheese for some extra flavor to make Zucchini Crisps!

Then in your newly created boat of zucchini, put red sauce of your choosing,  Parmesan cheese, mozzarella cheese, and pepperonis and then throw them in the oven! I threw them in for about 15 minutes at 400 and it worked for me!

Sprinkle with oregano when out of the oven for some extra taste of goodness!
