A Quarter of a Century Old

Well, here we are again. IT’S MY BIRTHDAY!! (tomorrow) I can’t believe I'm turning 25. I feel like I just turned 24 yesterday. I thought I would share 25 random facts this year about myself that might make you think I’m really weird or make us best friends.

1. I hate being hot and yet I live in the desert.
2. I have three birthmarks. The biggest one is on my lower back. Some people say it looks like a fish.
3. I still have some clothes from high school in my closet. They need to be thrown out. Someone save me!
4. I still wear have some jeans I wore in high school. They need to be thrown out. Someone save me.
5. I made up my own language as a kid. My parents had to learn it. Now for the life of me I am slowly trying to learn Spanish!

6. I am the worst at drawing. It is a talent I wish I had! I can't even draw simple things like a dog or a house. I totally identify with this.

7. I can braid or even french braid your hair, but I cannot do my own. (To be fair I can't do my own hair period...)

8. Water is my favorite drink ever. I am a cheap date. 

9. My mathematics skill set is near non-existent. I do know how to add, subtract, multiply, and divide. The rest is hazy. 

10. Most people have a favorite color. I seem to go through periods of time when I am attracted to one over all the others. 

11. I am fanatical about cheese and chocolate. I cannot stand most pastas, fish (any seafood for that matter, potatoes, rice, or nutella.

12. I can't stand noisy eaters.

13. My guilty pleasure career would be NFL cheerleader. This would combine my love of football and having a banging body. The ability to dance would not hurt my confidence either...

14. I have never really understood having a favorite number...

15. I do not have any interest in Disney. Jim Gaffigan and I are on the same page.

16. I have a scar under my right eyebrow from the corner of a marble tile. I had to have a plastic surgeon fix that one...

17. I also have a weird random bump on my forehead that I have had since I can remember. I have no idea what it is from. Sometimes it is more prominent than other times which is weird...

18. Feeling motivated and inspired are the two best feelings in the world.

19. I am a serial replayer of songs. Hope it's one you like....haha!

20.  I love beautifully wrapped gifts, but as proven, I can't wrap worth a damn!


Holiday presents.

21.  I have never dyed my hair or had a carbonated beverage in my life. But I will one day dye my hair. I will never have the carbonated bevvy...

21. I am from New Mexico originally. Yes I do know about Breaking Bad, No I was not from Albuquerque, and No I have not seen the show.

22. I would sincerely like to be rich and I feel no shame admitting this.

23. One of my BIGGEST regrets in life is that I did not continue to swim after being competitive in the sport for years. I still haven't started back in which makes me stupid.

24. I am large in the chest area. #bigboobieprobs 

25. Buy me flowers while I am alive and can enjoy them, not when I am dead and I can't.

How to Pack the Perfect Carry on Bag

She's BACK!

Alaska done come and gone and I loved every second of it! Alaska is a gorgeous state and I am so glad that I got to experience it. Truly an experience.

I babble...anyway....

In the past I have showed everyone a little bit of what I love to bring in my bag when I travel, but this trip is one of the bigger trips I have taken. These trips require slightly more planning.

I love me a combo of lightly salted almonds and semi sweet chocolate chips

 Vitamin C, Zofran, etc...You never know when you are going to need something

Retractable headphones
A good book (I like reading the actual book, not my phone/nexus/computer/whatever. Call me old fashioned

Chapstick and some lip gloss

Cruisin

I am leaving on a jet plane.

I don't know when I'll be back again...

Actually I do know when I will be back. And actually the heat here will still be waiting for me. But at least for a little bit, I am going to break away from the heat and enjoy uncharted territory for me.

I Love June

Especially this June...because usually June is a pretty bad month around these parts. Figure last year we were in the triple digits for ALL of June. This year thus far is looking to be no exception. And we even really started our triple digit trend in May and have broken a couple of heat records. 

But this June, I am escaping the heat. 
ALASKA here I come!

I am super stoked.

It is sandwiched between my anniversaries--my wedding May 26 and my dating anniversary July 2 and my enagagement anniversary July 3.

Stuffed Mini Peppers

I love any excuse to throw a party!

But to throw a party last minute...that can be kind of scary.

Enter in the Kentucky Derby. My friend wanted to have a party but ended up having more guests than his small place could afford.

Enter him asking me to host it.
Sure!?!

I needed some quick and easy things to put together, so enter stuffed mini peppers!


Basically this picture shows the fastest and ugliest way I could have done them, but they are good. I opted to stuff some with pimento cheese and cream cheese with a white wine pesto. You can also use goat cheese as well. The nice thing about them is you can serve them warm or cold. If you want to serve them warm, bake them for about 10-15 minutes or until the peppers are softened and the cheese is hot and bubbly.

Everyone seemed to enjoy them at the party. I know I always enjoy them and feel a lot healthier going for the peppers than another round of chips and dip.

Perfect pairing with plenty of mint juleps to go around.

Oh and might I take a mention to say at this party we put all the horses name in a hat and randomly drew from them putting in equal parts money per draw. I was the second to last to draw and there were two names left. One being California Chrome....

Sure didn't draw it.

Stromboli

As most of you know, I work as a nurse manager. I have to be there for any situation that could arise. This means some days are long and hard.

So I come home starving, because usually it is so busy lunch just kind of flies by.
Then I am tired so naturally, I don't feel like making anything!

Therefore I try and be the queen of easy...when it comes to cooking that is ;-)

Enter in the Stromboli. 
One of Kevin's favorite meals.

I use hate working with it, but it is much easier to use refrigerated pizza crust. 
It is as simple as rolling it out and placing red sauce, pepperoni, salami, ham, cheese, and more cheese on there.

And really the inside possibilities are endless!

I have also found that very little sauce is ever needed in this creation.

Gift Giver

I am the worst at giving gifts. 

Whenever I need to give a gift to someone, my mind goes blank. What does that person like? Even if I go into it having an idea of what to get someone, I still end up wandering around the store, picking up random items and wondering how much they'd hate it if this was their Christmas present. It can get quite painful for a challenged gift giver like me!

Then once I find a gift, you would think I would be good. But then comes wrapping the gift...which I am even worse at!

Usually I have to have Kevin wrap my gifts. Thank God for gift bags!

I usually end up finding cute gift bags at Marshalls, Home Goods, or Target.
If I can't find the right one, I do the second easiest thing.

Buy a brown paper bag, cut out paper, and adhere.



The perfect idea for my sister's graduation.
This way, I can ensure the bag is the right size for whatever gift I get her.

Graduations Happen

This weekend was just what was needed! I recharged by having nothing planned and just hanging out with Kevin taking it easy, doing some chores, and finishing up our garage project (more to come on that later!)

I made a quick trip to my hometown to see my sister graduate. Quick trip because unfortunately the graduation was on a Wednesday. Who does that?!
