Brownie Cookies

This Christmas I was super swamped with work and I just couldn't find a rhythm. I felt behind the whole season. I knew I wanted to make my nursing staff some cookies and so I needed something fast and easy to reproduce. I love to make my Peanut Butter Blossoms but I have this problem where I end up eating so many of them and have to make more for the people I originally made them for.


Enter in Brownie Cookies. I saw this recipe like this and became all Sandra Lee up in my kitchen (Semi Homemade anyone?)

And they turned out  so easy and amazing that I ended up eating more than my fair share before giving them to my staff...so I encountered the same problem I had with my peanut butter blossoms. I guess that is a good thing right?!


1 box of brownie mix (I used Pillsbury Family Size Chocolate Fudge--and I am not compensated for saying that.)
4 oz cream cheese, room temp
1/2 cup margarine, room temp (I usually would use butter for baking and got scared because I didn't have any and turns out they turned out well with margarine. A win for the lazy girl who didn't want to make a five minute trip to the store!)
1 egg
1 package of white chocolate chips (2 cups)


Preheat your oven to 350.

In a stand mixer (trust me you don't wanna do this by hand) beat cream cheese and butter until smooth. Add in the egg and continue to mix.

Then add in the brownie mix. Keep your mixer on low and the dough will come together. It is going to be very thick!

Stir in the white chocolate chips.

Then scoop the dough onto a pan and bake for 10-12 minutes. I always bake the first batch for two minutes longer than the rest. It just works. When the come out you want them to have a slightly cooked look to the edges and a slightly underdone look to the middle. Then as they cool it will all come together and you will have some amazingly gooey, chocolaty cookies.

These cookies stay pretty good for a while too and trust me everyone will love them! 
Part of my process always includes licking the beaters but mind you there is a raw egg in this thing. But just do it. It truly adds to the process of a happy baker in the kitchen :-)

Brownies or cookies? I say both!
