Cucumber Lime Margaritas

I just love margaritas. They are so good on a hot, summery night which for me are here!

Margaritas are best when they’re homemade. I have never found a pre-made margarita mix that I like as much as a homemade margarita. They are all too sugary and fake tasting. Nothing beats fresh!

Plus, those pre-made mixes have SO many calories! This one is around 100!

So I have to tell you, I found myself ready to go out of town the very next day on my Anniversary Trip and ready to give Kevin his gift. I found that I had a cucumber in the fridge and it was going to go bad over my vacation...so what is a girl to do with limited food and such in her house? Surely, not let the cucumber go bad, but make a drink with it! They only have 3 ingredients: cucumber, tequila and lime juice. Doesn't get simpler than that! 

I started by peeling the cucumber. I was sure the skin was just going to make the margarita taste bitter.

Then my plan was to strain it by blending the cucumber (since I don't have a juicer) and strain the juice. But then my blade wasn't attaching to the blending unit. I got scared and opted not to use it. (Other people get scared to use their kitchen things too right? Nope? Just me....)

Kevin was not home yet and I wanted my drink now, so I hand juiced them and let the juice and chopped up cucumbers sit in the fridge for 20 minutes in tequila and lime juice.

Then I had it like a Sangria! I thought it was good. Strong. Just what I needed!

Notes for this drink:

I recommend trying it juiced, I think it is better that way.

I prefer regular cucumbers over english cucumbers since they have a higher water content and make more juice, Kevin would say the opposite, but I don't think he is a huge cucumber fan in the first place.

I don't normally advocate for using the highest quality of tequila in my margaritas, but in this one where it shines, I would. Reason being, I would rather save the expensive stuff for a shot rather than a mixed drink. This girl is on a budget and can't be pouring Patron in everything. Jose Cuervo can do the trick.


1-1/2 ounces silver tequila (I used Patron)
1 lime (squeezed for fresh lime juice)
1 cucumber (juiced) 
Cucumber for garnish 


Cucumber juice: Juice the peeled cucumbers in your juicer or blender. If using a blender, add the cucumber and blend for about 30-45 seconds until it looks like thick juice. Separate the pulp from the juice by setting a fine mesh strainer over a bowl or large measuring cup. Gently push on the pulp using a wooden spoon.

Margarita: Place cucumber juice, tequila, lime juice, and either ice cubes )or your cold tequila soaked cucumber chunks haha) in a shaker. Shake and pour into a margarita glass. Stir to combine. Garnish with cucumber.
