Zucchini Corn Pie

Wow, it has been a while since I have posted some recipes around these parts. I think it is because I am having some serious trouble. I am trying to lose weight and do low carb and exercise, but sometimes I just have trouble doing so!

But now this, this pie, this was a success. It has no crust. NOW before you tell me I am crazy, hear me out:

1. When you eat a pie, the filling is the most important part
2. It is healthy
3. It is easy
5. You can improvise

Yeah #5, if you don't like zucchini (you animals!) you can put whatever veggie you want. I am thinking of making this over and over again with different combos: corn and mushrooms, corn and peas, just corn, corn and spinach, corn and broccoli....should I stop?


4 tablespoons of butter
1 tablespoon of onion powder
2 cups of frozen corn
2-3 small zucchinis (sliced thin)
1 tablespoon of dried basil
1 teaspoon of dried oregano
1/2 teaspoon of salt
1 1/2 cups of shredded cheese (I did one cup of shredded cheese and 1/2 cup of mozzarella) You can do whatever and even add more cheese if you want!
3 eggs


Preheat the oven to 375. Heat the butter in a LARGE skillet over medium high heat. Add the onion powder and sliced zucchinis. Then add the corn. It takes the zucchini longer to saute then the corn so just use your judgement on when to add the corn. Continue to saute both until they are soft (took me about ten minutes). Remove from heat.

Add the basil, oregano, salt and stir to combine. Add the cheese and eggs and beat together.

Grease a 9 inch pie pan and transfer the mixture to the pan and top with some extra cheese. Cover with foil and bake for 20 minutes. Then remove the foil and bake for 5 more minutes to brown the top slightly. Let it stand for 10-15 minutes after before cutting it into slices.

And enjoy a healthy way to eat dinner this summer!
