Caprese Chicken

I keep marveling at how it is already September. This summer just FLEW by (thank God!) With that said, this blog ain't getting pumpkin everything yet! (That is another thing I left out of my blog rant here...did anyone feel like everyone got way to fall premature during the Nordstrom Sale?!)  I am still enjoying my favorite summertime flavors, one of them being Caprese.

My parents came in town a couple of weekends back and I know my love for Caprese was passed on to me from my mom!

Therefore, Caprese Chicken was born!


3 chicken breasts
1 large slicing tomato
LOTS (about two-three cups) of mozzarella cheese
Balsamic reduction


Preheat the oven to 350 degrees.

Take chicken breasts and slice length wise to make chicken breasts thinner. Place chicken in pyrex and cover with light salt and pepper.

Slice tomatoes and mozzarella and cover with chicken breasts. **Note, I have used fresh mozzarella and sliced or shredded mozzarella. I have learned you don't need fresh, I don't taste too much of a difference and fresh is more expensive.**

Bake for 40 minutes.  Cover with a balsamic reduction and Enjoy! Serves 5-6!
