Shimp Fajitas (Foil Dinner)

12 hour shifts lead to me not making dinners when I get home. Therefore, I menu plan and leave instructions for the husband. The easier the better! He absolutely loves (and is) the grillmaster. He was very happy to have such an easy recipe on the grill!

Best part is that having him man the grill means my oven doesn't heat up the house on these triple digit AZ summer days!

And with my trying to learn to love eats from the sea more (so far scallops and shrimp are okay) this recipe is great!


1 bag of medium shrimp, cooked, peeled, and deveined
1 red bell pepper
1 green bell pepper
2 tablespoons of olive oil
2 tablespoons of taco seasoning
1/2 teaspoon of lime juice


Preheat the grill over high heat.

Cut two pieces of foil. Divide shrimp, bell peppers, and add to the center piece of foil. Fold up the sides and add olive oil, taco seasoning, and lime juice. Toss then seal the packets closed in the foil.

Place the foil packets on the grill and grill for about 10 minutes!

Serve with tortillas and garnish with sour cream and cheese. Or without the tortilla if you are on low carb.

Seriously that is all it takes. You can go make it now! No seriously, I'll wait, that is how NOT long this recipe is! ;-)
