Peanut Butter, Banana, Chocolate Chip Muffins

Some mornings I should be embarrassed by what I just make and jump in the car with for breakfast before work. A quesadilla is probably not the best, but it is my go-to.

I needed another go-to. Enter a muffin. But the problem then became the calories. Then I came up with another go-to. Cause I am just your go-to girl!

If you are weary to make a no flour, no added sugar muffin, just know that this girl loves them because they are the softest and moistest around. And this is coming from a girl that loves everything decedent.


1 ripe banana (peeled)
1 large egg
1/2 cup of crunchy peanut butter (I'm sure creamy would work too)
3 tablespoons of honey
1 tablespoon of vanilla extract
1/4 teaspoon of baking soda
heaping amount of semi sweet chocolate chips


Pre-heat the oven to 400F. Spray mini muffin pans with some cooking spray and set aside. Add the first 6 ingredients into a bowl and stir.

Add in the chocolate chips and stir.

Place little dollops into your mini muffin pans and place in oven for 9 minutes--the top should be set.

Then enjoy the world's easiest, moistest muffins there are!

October Do

Fall is my favorite time of year. I would say a lot of other people agree with me because I see nothing but pumpkin, flannels, and coffee on everyone's IG and blog! None of the above I have done this fall, but so far in October I have really gotten into my own fall spirit. Here are five fall things I have done:

Fall Football
I even went to a fall football game! Fall is Football for me!

Fall Food
I have eaten pumpkin cookies, chili, pumpkin alfredo ravioli, and just a bunch of warm foods. It is great!

Gilmore Girls
I have totally been binging on Gilmore Girls. Looking into Stars Hallow makes me think fall, fall, FALL!

Fall Candles
Yep, I put them out and burned them. The house smells so good. Just don't tell anyone that I still have the AC going!

Fall Walk
Because I am in Arizona I have to go early in the morning so I don't burn up in the AZ heat. The desert is alive!

Common Questions Asked To Nurses

I think a lot of people get asked what do you do or while at work (if you work with customers/clients) get asked a standard set of questions based off of the answer. I am here to share with you  some of the common questions I field as a nurse. I am sure some other nurses will agree!

Hey, I have this rash…is this serious? This question is part of an age old misconception. People think because we work in healthcare, we can make assessments based on incomplete information. Nurses aren’t the only victims. Mechanics get asked all the time to diagnose car problems…based on a few sounds. I wish we could just say well bring it on over and I will take a look at it…for a fee. But we can't. That is what the ER is for.

My light has been on for hours! Where have you BEEN?!  What I wish I could say: you are low on my priority list because two other people had more urgent emergencies and you were needing something that my patient care technician could have gotten you, but instead you insisted on me, the nurse. The answer I will give you: I am so sorry, I got here as fast as I could.

Why are there such long wait times around here? Well in a hospital is a patchwork of different departments, different units, different management systems, doctors, nurses, technicians, labs, and a pharmacy, all coming together to care for you: the patient. I know you are worried about you, but I am too, problem is, it is not only you. We will let you eat as soon as the results of your procedure come back.

Have you done this before? Yes, I am glad you think I look young. You should always have help if there is something you have never done. We do have to learn, but we will ensure we do it as safely as possible.

Can I get my next pain medication now? It depends on one thing. The clock. Not the number of times you ask for it.

What’s the craziest thing you have ever seen/craziest thing that has ever happened to you? Too many to keep track of. But if I have some time, and I feel like it, I would like to share a nice little nursing story now and then (withholding identifying information, of course). People love hearing them!

Pumpkin Alfredo Ravioli

You know those recipes that sound to fancy to prepare at home so the only time you enjoy them is at a restaurant where you usually pay up to five times for what it actually costs? I have done that with my ravioli at this one great Italian place her in town and each time I get my bill, I look and say something must change! While Ravioli with Pumpkin Alfredo sauce may sound fancy, it really is not! As a matter of fact, it is quite easy. And once you make it a few times, you will be cruising on your own without having to refer to the recipe at all. This recipe could easily become a weekly special on your menu. Really.

Especially in the fall, when everyone is doing pumpkin everything!


1 package of frozen cheese ravioli
3 tablespoons of flour
2 cups of chicken broth
1 cup of milk
2 tablespoons of butter
1/2 teaspoon of garlic powder
1/2 cup of shredded Parmesan cheese
1/2 cup of canned pumpkin
1/2 teaspoon of parsley
dash of nutmeg


Bring a large pot of water to a boil and cook ravioli according to package directions and drain.

In a bowl, whisk together flour, chicken broth, and milk.

In a large skillet, melt the butter and add the garlic. Then add the mixture from the bowl and add Parmesasn cheese, pumpkin, parsley, and nutmeg. Stir occasionally until thickened. (about 10-15 minutes)

Stir the ravioli into the sauce and serve!

When Your Metabolism Slows Down

Ugh. My metabolism just is not the same anymore. It is not very fun.

I had this post where I had this great plan to get into shape. Well...recovering from my knee injury and having a bad back has been making it hard. 

It has now been 7 months since my surgery. I have definitely been strengthening the leg but it is a long process. I would never wish this process on anyone. Tearing my ACL, MCL, and LCL probably wasn't the best idea. Thankfully I had a great surgeon who took a piece of my hamstring and made me a new ACL. I also had a great physical therapist to help me through the recovery process and lastly I had my mom and husband who were there for whatever I needed. I joked that I wished I was a NFL football player who had torn my ACL. Those players make a lot of money even when they are hurt and have a state of the art team helping them get better. But now that I am in my recovery, my team, well, I wouldn't trade them for the world. They are awesome.

But apart from my slower metabolism and my knee setting me back, I am realizing that my body is already changing in other ways. I am only 26...how is this possible?! I don't need a pity party, but are any of you guys feeling the age?! There are fine lines that I have never previously had to worry about. Plus now I have some pizza and I then I can't fit into my pants. 

Chocolate is my weakness. I have tried to go with European researchers idea. Some European researchers say that eating chocolate was associated with lower levels of body fat because chocolate is high in catechins which increase insulin sensitivity. Green tea also has catechins...that is probably healthier, but still, I can have chocolate once a day (at least!)

Well, off to the gym I should go!

Pumpkin Cookies With Cream Cheese Frosting

October in Arizona is a good month, it doesn't quite feel like fall yet, but it isn't triple digit heat anymore. Hey 95 degrees is not triple digits! My husband is loving the weather and I just wanted to bring a bit of fall into the house.

Enter pumpkin. Everyone else has pumpkin going on, so I thought I would join in! I shouldn't have made these because I always eat too many to count!

These cookies are soft. I think though there would be one change I would make...I used store bought frosting. I know, slap my hand...in this day in age where everything is perfect and homemade. But I am a working girl and short on time. Interestingly enough I think I liked the cookies more after I let them sit and the cream cheese frosting settled. It was like magic...


1 cup of butter, softened
1 cup of granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon of ground nutmeg
1 egg
1 teaspoon of vanilla
1 cup of canned pumpkin
2 cups of flour
1 can of cream cheese frosting


Pre-heat the oven to 350F.

In a large bowl mix all dry ingredients and whisk. Then add the butter and mix. Add the egg and vanilla and beat.

Then combine with pumpkin. Lastly, beat in flour.

Place dollops onto cookie sheet and bake for 12-15 minutes until tops are set. Transfer cookies to wire cooling rack.

When cookies are cool, frost the cookies with cream cheese frosting and enjoy!

Caprese Bites

Decisions, decisions! Who to cheer for… the Denver Broncos and Cleveland Browns play. Both teams I cheer for. At least I'll be happy with whomever wins!!

I wish this was the Super Bowl...that would be awesome...to love both of the teams! I guess I better keep dreaming. Neither look like Super Bowl contenders.

One decision I don’t have to make is what I’m serving as an appetizer. And since summer never seems to end in Arizona, Caprese is still always....a good and easy idea.


Wonton wrappers (how many depends on how many you want to make!)
Basil Pesto 
Shredded mozzarella cheese (or sliced, or sliced fresh, whatever you have...I use shredded because it works and it is cheaper and I don't notice enough of a difference to use fresh)
Cherry tomatoes
1 tablespoon of olive oil


Place wonton wrappers on flat surface. Place a small dollop of basil pesto in the middle.

Top pesto with a cherry tomato and mozzarella cheese. Fold up your wontons.

Heat olive oil in a large pan. Don't put too much, you are not deep frying them. Place your wontons in there and fry for 1-1.5 minutes on each side.

Drain on paper towel and then serve warm!

One More Hour

I don't know about you, but I find myself often wishing for more time in the day (outside of work of course.) There are things that we don't get done in a day. Often times because of that, something ends up getting sacrificed during your day.

So here I find myself asking...what would I end up doing if I had an extra hour a day?

I would like to hope I wouldn't spend it sleeping, that it would be something productive. I wish I could have healthy cooked meals for breakfast, lunch, and dinner. I wish I could work out more. I wish I could take more time for me...do my nails, do my hair, etc. 

But alas, we don't have an extra hour a day. Therefore, I think we just need to just live our happy, healthy, fulfilled lives and take out what doesn't serve us in our life. Give yourself time to prioritize and you may just clear an hour a day and become productive.

I have decided to stop making excuses, I cannot complain about not having enough time if I am not willing to try and find more time. If I am not using my time intentional and purposeful for work, I will ensure I am doing what I love and loving what I do.

So stop telling yourself you are too busy. It will hold you back from finding the time in our schedule that is ready and waiting to be utilized. 

Go get what you need and want. Right now.

A Denver Adventure

Kevin and I took a spur of the moment trip to Denver, Colorado. Thankfully spur of the moment trips are easy when we have family and friends in the area!

We spent time with Kevin's family and did Rocky Mountain National Park. It is so beautiful there!

Then we went down to Denver and got to briefly see Andrea.
Always love to see her!

Then we went for the big reason for our trip. Our first Denver Bronco game!

Boy was it a little stressful getting the tickets though. We decided to wait till the last minute to buy tickets thinking the price would go down. Then we saw the prices go up and got nervous so we bought our tickets the night before. The morning of the game we wake up and our tickets were refunded to us. Thankfully after a momentary...moment we found some alternative tickets and enjoyed a WIN!

The Workspace Tour

I love offices.
Seriously. I dedicate a whole room to being an office.

Three reasons why:

I can spread out whenever I need to and not have to pick up after myself just to reuse, for instance, my dining room table.

It helps me get more work done. I am more serious in there. Whether I need to go into serious bill paying/work mode or creative mode, it can happen there. It is a room of focus. Much more focus than me sitting in front of the TV trying to make any of that happen.

I have everything I could possibly need. I have highlighters, pens, scissors, and heck my office is even between the bathroom and kitchen. Time is money. Let's be efficient.

When we initially moved into the house, I painted the walls and that was about it (3 years ago! Wow!). I have finally got the entire room sorted and feel very accomplished. Now the trick will be to keep it clutter-free (I’m currently staring at the papers and notepads stacked beside me). And even harder, to convince my husband to keep it clutter free. To be fair, I don't have a lot of closed storage in this room, and so far that is helping me keep everything looking clean, nice, and organized, and making me very quickly get rid of things that I don't need.

I have an old laptop because right now I see that being more functional than a desktop and have added dual screens. I could have done with a bigger desk (in white), but that will come in time.

You think the dual screen action is insane, just wait till you see Kevin's space...

I re-purposed a lot of old, cheap pieces of furniture for my office. Sometimes you just have to do that and not rush into pouring money into an area. 

I wrote about not pouring too much money and living in an area before buying up stuff {here}.

The trick now is to keep it cool. I really don't love the idea of placing a big, bulky stand alone A/C unit in there, but the room gets HOT. It has a window where the sun comes in (which would be beautiful really, if I did not live in the DESERT) and it is full of running electronics. We do have a ceiling fan that I still want to re-do, but the heat does get to me in the summer.

Staying Motivated at The Gym When You Aren't Feeling It

Working out is hard.

Working out when it's triple digits and you work 12+ hour shifts is harder.

Yesterday I just wasn't feeling the gym. At all. I am in the beginning stages of living a healthier lifestyle and being motivated to do so (Therefore not a ton of results yet) and all I wanted to do was eat a bag of Reeses cups and grab a glass of wine or three...

And the act of simply going does you know good. I can go to the gym and get a few reps or whatever, but it won't neccisarly do me any good. I wrote a little here about how it all just takes time.

On days when I am feeling like this, I just have to remember:

1. Call Kevin, he will tell me to go and get it.

2. Turn up the music.

3. Have a plan. Pack your workout clothes, write it on your calendar, pay for the membership yourself.

4. Stop making excuses. The gym is air conditioned so triple digits don't matter. You work 13 hour shifts, that's not changing...you being overweight then will not change. Just go.

5. Look at something that inspires you and know that going to the gym regularly is a relatively small amount of time to dedicate to your lifestyle.

From my Parents

Tomorrow is my parents 35th wedding anniversary. So in honor, I thought I would share ten life lessons that I have learned from my parents:

Be a good friend. And you will get good friends.
Be open to criticism. You never stop growing, changing, and learning. Challenge yourself.
Help others. It is about giving.
Celebrate holidays with family. Be together, life is finite.
Work hard.

Eat dinner together. Despite busy schedules, I remember us making time to eat dinner together.
Live within your income. My parents always lived within their means, no matter the income. 
Get up early. My dad was always up early and sets a great example.
Value children. Have them and be a good, involved parent.
Get a good education.

How to Work Well With Co-workers

So as you know, because all I do is talk about me on this blog, I changed jobs a little while back. When you start a job, one of the first concerns is how to connect with your co-workers. Thankfully, I have connected well with my co-workers (they made it super easy!) and while every job is different, there are three rules for interacting with co-workers that are pretty universal.

Don't Talk Behind The Back

This is probably a good one in and out of the work environment. There are going to be times where people have conflicts with one another and will talk about it openly. Do not say anything to anyone about others. If you have a problem with someone do not address it with other people behind that person's back. If you address an issue with someone, keep your emotions in check as most conflicts come from an emotionally charged exchange. Address it with them first and then if you need to use your chain of command.

Giving Criticism

I have had to deal with this as a manager and also in hierarchy. It is stressful to comment on someone's performance or offer constructive criticism. No one wants to tell another someone they did something wrong. The best way to handle the issue is to be honest though. Placing blame never helps, but telling someone how they could be more efficient or proactive is more than okay.

Ask for Help

In the workplace, like at home, it takes a village. Work together with your co-workers and especially when you are new, ask for help. Be confident but never a no it all. Asking and giving help will be more effective and efficient overall.
