Peanut Butter, Banana, Chocolate Chip Muffins

Some mornings I should be embarrassed by what I just make and jump in the car with for breakfast before work. A quesadilla is probably not the best, but it is my go-to.

I needed another go-to. Enter a muffin. But the problem then became the calories. Then I came up with another go-to. Cause I am just your go-to girl!

If you are weary to make a no flour, no added sugar muffin, just know that this girl loves them because they are the softest and moistest around. And this is coming from a girl that loves everything decedent.


1 ripe banana (peeled)
1 large egg
1/2 cup of crunchy peanut butter (I'm sure creamy would work too)
3 tablespoons of honey
1 tablespoon of vanilla extract
1/4 teaspoon of baking soda
heaping amount of semi sweet chocolate chips


Pre-heat the oven to 400F. Spray mini muffin pans with some cooking spray and set aside. Add the first 6 ingredients into a bowl and stir.

Add in the chocolate chips and stir.

Place little dollops into your mini muffin pans and place in oven for 9 minutes--the top should be set.

Then enjoy the world's easiest, moistest muffins there are!
