Pumpkin Cookies With Cream Cheese Frosting

October in Arizona is a good month, it doesn't quite feel like fall yet, but it isn't triple digit heat anymore. Hey 95 degrees is not triple digits! My husband is loving the weather and I just wanted to bring a bit of fall into the house.

Enter pumpkin. Everyone else has pumpkin going on, so I thought I would join in! I shouldn't have made these because I always eat too many to count!

These cookies are soft. I think though there would be one change I would make...I used store bought frosting. I know, slap my hand...in this day in age where everything is perfect and homemade. But I am a working girl and short on time. Interestingly enough I think I liked the cookies more after I let them sit and the cream cheese frosting settled. It was like magic...


1 cup of butter, softened
1 cup of granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon of ground nutmeg
1 egg
1 teaspoon of vanilla
1 cup of canned pumpkin
2 cups of flour
1 can of cream cheese frosting


Pre-heat the oven to 350F.

In a large bowl mix all dry ingredients and whisk. Then add the butter and mix. Add the egg and vanilla and beat.

Then combine with pumpkin. Lastly, beat in flour.

Place dollops onto cookie sheet and bake for 12-15 minutes until tops are set. Transfer cookies to wire cooling rack.

When cookies are cool, frost the cookies with cream cheese frosting and enjoy!
