Turkey Soup

My favorite thing after Thanksgiving is to make Turkey Soup. It is so warm as I pretend the weather is getting cold outside. So what if truly does not ever get cold enough here in AZ to be soup weather...a girl can dream!

Plus this way, me being a no waste sort of girl, gets to use all of the Turkey! And even if the weather doesn't get cold, it comes in handy in case you get a cold right after Thanksgiving (which I did last year...and may be starting to get one now!)

Best of all, it is super easy to make. Prep your stuff and throw it in a pot! Can't get easier than that!
And don't forget the peas like my husband did last year when he made it for me as I was sick with my cold. Peas rock. I will make it this year, but with the peas.


1 picked over turkey carcass
2 celery stalks
2 carrots peeled
2 cups of peas (I use frozen)
1 onion peeled and diced
2 bay leaves
1 teaspoon sage
1 teaspoon dried thyme
1 1/2 quarts chicken broth
1 tablespoon of poultry seasoning
1 package of egg noodles
ground pepper to taste
garlic salt to taste


Place the turkey carcass in a large, deep stock pot, and add the celery, carrots, onion, bay leaves, poultry seasoning, sage, thyme, and chicken broth. Pour in water to cover the by about an inch. Bring to a boil over medium-high heat.

Once boiling, reduce heat to medium, and simmer for about 3-4 hours, skimming off any foam periodically. After the 3-4 hours, remove the carcass and any bones. You can use a strainer or slotted spoon to help remove the bones and vegetables from the stock. Pick any meat off and return to the pot, discarding bones and skin. Return the vegetables.

Season to taste with garlic salt and pepper. Stir in the egg noodles and return to a boil over medium-high heat. Lower heat to medium, and simmer 15 minutes. Stir in the peas, and continue to simmer until egg noodles are tender.
