Girl Code

Girl time is always good time. I love all my girlfriends. You guys are everything! Friends are there when you are not ready to handle something alone. Friends are pretty great to have.

Friends are ones we can swap secrets with and they can give an honest evaluation of somethings we may be too afraid to tell ourselves.

Though we might not always be physically with them, are are together. We carry them everywhere, through everything.

A good lesson for young girls is to learn to protect that relationship. Build each other and learn. This season now that Bethenny Frankel was back, I started watching RHONY. I loved how they referred to Girl Code. It is real, but unspoken. By the way, I think girl code was totally broken when the one night stands were allowed to sleep in the house. No wonder Heather and Carole were so pissed. In addition to their safety, their jewelry is probably worth a fortune! Haha! Here is some of the girl code we promise to each other:


1. I promise that I will disagree with you, not sugar coat the tough stuff, and as long as you listen, I will respect your decisions.

2. I promise to hold your hair back and get you home safe.

3. I promise to laugh at you when you fall. I promise to laugh so hard I actually start to pee a little.

4. I promise to tell you when you are making a mistake and do what I can to help you out of it.

5. I promise to remind you that things could be worse. I will give you positive when you feel negative.

6. I promise never to show up empty-handed and to bring enough wine and cheese for the both of us.

7. I promise to protect you from others and sometimes even from yourself.

8. I promise to tell you when your outfit is not working. Like seriously, take off that sequined vest...it does not work.

9. I promise to stand up for you, stand up to you and stand with you.

10. I promise never to standby while a man who you love disrespects you.

11. I promise, for the most part, the stupid stuff you want to do, if I don't talk you out of it, I may do it with you and we can regret it later. 

12. I promise never to assume you want to share that chocolate. I will bring more.

13. I promise that despite any physical space or lack of talking, I will be here like nothing ever happened.

14. I promise to protect your secrets like they were my own.

15. I promise to build you up and not spread gossip or partake in any about you.

Cauliflower Soup

I love football season. I especially love the yummy, bad for me foods. But sometimes I do need to balance out all those calories and I turn to cauliflower soup! I gotta be able to fit into my jersey!

Enter cauliflower soup. I have been turning to cauliflower lately to try and expand my vegetable palate.

This soup is really my favorite way to have cauliflower that I have tried thus far.



Ingredients:

1 head of cauliflower, chopped
2 tablespoons of butter
1 tsp garlic powder
1 onion, diced
1/4 flour
1 cup peas
12 oz chicken or turkey broth
1 cup of milk
1 bay leaf
4 slices of bacon, chopped and crispy
cheddar cheese to top
salt and pepper to taste

Directions:

Melt butter in a large stock pot and add garlic powder, onion, and peas. Cook for 5 minutes. Stir in cauliflower and bay leaf and cook until the cauliflower is tender (about another 5 minutes)

Whisk in flower until lightly browned and gradually whisk in milk and broth stirring constantly until slightly thickened.

Bring to a boil and then reduce the heat. Simmer until the cauliflower are tender (about 15 minutes) and season with salt and pepper. If the soup is too thick, add more milk (I usually end up adding in some)

Serve garnished with cheddar cheese and bacon!

Wednesday Words

I seriously have been working so much I am exhausted. I am surprised that I even have thoughts this morning...but here they are.


Miss Colorado totally re-tweeted me! If you didn't hear, Miss Colorado came out and talked about a patient for the talent portion. Then Joy Behar (being herself) said something stupid (why is she wearing a doctor's stethoscope was my fave line). You can read more about everyone's thoughts anywhere, and I don't need to duplicate those thoughts. So.... Bottom line, Joy Behar is an idiot, I cannot believe people still watch the view..it is not a relevant or entertaining show anymore, and there are other talents besides singing, dancing, and twirling a baton. Plus...

I totally spent a phone call with my mom last week after the debate summarizing my views to her. I wish I recorded myself...I thought I was pretty spot on!


Fantasy Football thoughts: Also very happy that Denver won!! And happy that Cleveland won! Now if I could just get my fantasy game going...


I am participating for the second time in Jenn's awesome The Fall Movie Challenge. Downside is that it happens in the fall when football is on, so I am a little behind in watching movies. I plan to all day today with my day off. Anyone who comes on over, bring chocolate!


I have really been getting into Twitter more...who knew!

I hope everyone has read my favorite Craig's List listing which is some really good advice when you go into the hospital. I have had a recent increase in people with 10/10 pain....

Arizona Home

An interesting part about being an adult is moving somewhere and starting a life. When I started this blog, that was just what me and my husband were doing in Arizona. We have had fun making it home. Sure, sometimes there are times we look out and just see nothing but cactus and the majesty weans off, but then we always find something to renew the spark. I mean, we bought a house here, we are basically saying that we love it so much here, that we are here for the long run.


Says the girl who was CONVINCED she was going to move somewhere with LOTS of trees. And yummy tasting soft water. But look, you can go up to the mountains and find some trees...



The summer is the worst time to be in Arizona though. You run into upwards of 115 degree days. We are basically opposite of everyone in the country and come out after summer and enjoy some beautiful weather. Our AC bill is a bit uncomfortable in the summer and we have a uncanny eye for parking spots in shade, but basically, dare I say...we are getting used to it!

I guess bottom line is I feel good here...at home. And I couldn't be happier...unless the summers were cooler.

Cantaloupe Pizza

Cantaloupe has been on sale lately. I have been stuffing my face so fast, but still I can't keep up. So what is a girl to do?!

Add it to a pizza sounded like the logical choice...

By the way, I need to get much better at photographing my stuff, but I always get so hungry.
Oh and I should warn you, my husband was not a fan. This pizza may not be for everyone.
It was all mine! :-)




Ingredients:

1 pizza dough (my recipe here)
1 cup ricotta cheese
2 tablespoons of honey
1 cup of sliced cantaloupe

Directions:

Preheat the grill on high with pizza stone over grate of the grill.

Mix the ricotta and honey in a small bowl. Put over the pizza crust and top it with pieces of cantaloupe. Put onto baking stone. Cover and grill for 3-5 minutes. Be careful not to burn the bottom!

Charity Case

Charity. Sometimes it can be hard.  Sometimes charity can feel like you give up money and that it is it.  But there is more. You can tell a friend about the charity or post about it on social media. These are some of the many other ways you can help. The other had thing about charities is that they are not all 100% honest to contribute to a better, brighter future. The truth is that even with charities you have to do a little research. Here are 5\3 organizations whose stories I wanted to share are great – but that doesn’t mean there aren’t many others that would benefit from our support right now too.

And since September is Childhood Cancer Awareness Month (And Blood Cancer Awareness Month) and since my sister had to hear the words "you have cancer" and since only 4% of all federal research funding is designated for pediatric cancer, I am all in to helping with what I can!

The Leukemia Lymphoma Society
They have many different fundraisers such as Light the Night and Team in Training. They donate to many cancer research projects.

The Ronald McDonald House Charities
Cities all over often have these houses. McDonald's is their largest corporate sponsor. When my sister was receiving treatment and needed housing, the Ronald McDonald House was there. It was a lifesave. You can donate in many ways depending on house needs. Some give you opportunities to cook for families, you can collect pop tabs, you can donate toiletries, volunteer, basically....the options are endless!

Primary funding comes from the purchase of a Hyundai vehicle. You can also just donate or they have merchandise and a 5k. They are committed to the fight against pediatric cancer

Stretch Yourself Skinny

I ended up having a patient pull me while working one day and ever since, my back pain was exaggerated. I had some x-rays and started to do some stretches and even physical therapy about it. I knew I had Lordosis of the back, but found that I also have Scoliosis.


Bummer. 

Lordosis can lead to weak lower abs and a pelvis that tilts forward push your stomach outward.

Scoliosis can make your torso appear wider than it actually is because your shoulders round and can compress your ribs and abdomen.


The fixes for these issues is pretty simple and I have noted some good results.
I will also say this is coming from a girl who realizes getting skinny is not easy and who thought stretching was over-rated, but now my mind is CHANGED.

 Kneeling Hip-Flexor Stretch
Kneel on your right knee and put your left foot in front of you. Gently push your hips forward as far as you can. (You should feel it in your right hip.) Hold for 30 seconds, then switch sides. Repeat three times.

Lying Lat Stretch
Lie flat on your back and grab your right thigh. Push it against your body and to the left.. Hold for 20 seconds and switch legs. Repeat 3 times.

Rhomboid Stretch
Stand up straight and place your arms in straight in front of you and cross over. Put your hands flat against each other and press together.

Shimp Fajitas (Foil Dinner)

12 hour shifts lead to me not making dinners when I get home. Therefore, I menu plan and leave instructions for the husband. The easier the better! He absolutely loves (and is) the grillmaster. He was very happy to have such an easy recipe on the grill!

Best part is that having him man the grill means my oven doesn't heat up the house on these triple digit AZ summer days!

And with my trying to learn to love eats from the sea more (so far scallops and shrimp are okay) this recipe is great!



Ingredients:

1 bag of medium shrimp, cooked, peeled, and deveined
1 red bell pepper
1 green bell pepper
2 tablespoons of olive oil
2 tablespoons of taco seasoning
1/2 teaspoon of lime juice

Directions:

Preheat the grill over high heat.

Cut two pieces of foil. Divide shrimp, bell peppers, and add to the center piece of foil. Fold up the sides and add olive oil, taco seasoning, and lime juice. Toss then seal the packets closed in the foil.

Place the foil packets on the grill and grill for about 10 minutes!

Serve with tortillas and garnish with sour cream and cheese. Or without the tortilla if you are on low carb.


Seriously that is all it takes. You can go make it now! No seriously, I'll wait, that is how NOT long this recipe is! ;-)

A Room of Memories

One of my favorite rooms in the entire world is a my very first living room. I sat in it two weekends ago when I went and visited my parents house. It is a room that is not often used anymore now that my parents have remodeled, but I can’t tell you how many days and nights were spent there. I was never alone, there was always watching of movies, playing games, and hanging out. I remember spending my Friday nights watching monster movies with my dad.


We carved pumpkins for Halloween and we opened and celebrated many Christmases in that room. My sisters and I had dance parties in that room and had many laughs. That room went through many changes towards my teenage years when my parents remodeled and added on a new living room. 

I have rarely ever felt as comfortable anywhere as I did in that room. It was just a happy place–we hung out, joked around, and generally had a good time. It’s where we gathered for just about everything. My mom as always kept it decorated beautifully making it truly feel welcoming and like home. 

It is now a different room than it once was, it evolved like we did. 
But for forever it will hold a special connection with me to remember such a happy family time.

Caprese Chicken

I keep marveling at how it is already September. This summer just FLEW by (thank God!) With that said, this blog ain't getting pumpkin everything yet! (That is another thing I left out of my blog rant here...did anyone feel like everyone got way to fall premature during the Nordstrom Sale?!)  I am still enjoying my favorite summertime flavors, one of them being Caprese.

My parents came in town a couple of weekends back and I know my love for Caprese was passed on to me from my mom!

Therefore, Caprese Chicken was born!


Ingredients:

3 chicken breasts
1 large slicing tomato
LOTS (about two-three cups) of mozzarella cheese
Balsamic reduction

Directions:

Preheat the oven to 350 degrees.

Take chicken breasts and slice length wise to make chicken breasts thinner. Place chicken in pyrex and cover with light salt and pepper.

Slice tomatoes and mozzarella and cover with chicken breasts. **Note, I have used fresh mozzarella and sliced or shredded mozzarella. I have learned you don't need fresh, I don't taste too much of a difference and fresh is more expensive.**

Bake for 40 minutes.  Cover with a balsamic reduction and Enjoy! Serves 5-6!

Time Flies

I cannot believe it is already September! Anyone else feeling that way?

Summer seems to be going by very fast. Summer going fast is good for us Arizonans and the crazy heat. My summer has been filled with family visits, travel, job changes, physical therapy after tearing my ACL, a blogiversary, anniversary, dativersary, birthday, and the list goes on...

Now I am looking forward to cooler temps and being able to be comfortable outside, football season (and winning my fantasy football leagues this year), working and blogging, and exercising. I already even joined a gym and am starting to learn weight lifting and getting back into swimming!

And September is Childhood Cancer Awareness Month. Raising money for childhood cancer awareness and leukemia is a cause close to my heart!
Here it goes! Let's enjoy it!
