Lauren's Lasagna

Okay, so this recipe should be more like "Lauren Makes Kevin Lasagna." Seeing as I am on a diet, Lasagna is not so diet friendly. Just because I need to drop a few pounds doesn't mean though that Kevin has to suffer.

Best of all, I can make and assemble this recipe, pop it in the fridge, and Kevin can pull it out on a night I am working. I think it beats cereal...#mealprepforthewin!




Ingredients:

Sauce:
1 roll of sausage
3 tablespoons of garlic powder
1 12 ounce can of tomato paste
1 1/2-2 tomatoes, diced
3 tablespoons of Italian seasoning
2 tablespoons of dry basil
1 heaping teaspoon of sugar
5 cups of water

Lasagna:
Lasagna noodles, cooked according to package instructions
15 ounces of ricotta cheese
2 tablespoons of dry parsley
1 egg
shredded mozzarella, to taste (bonus for some sliced fresh mozzerella on top of the lasagna!)
Parmesan cheese, to taste

Directions:

For the sauce, brown your sausage and drain. Then in a stock pot, add all ingredients and let simmer, stirring occasionally.

In a small bowl, stir together ricotta, egg, and parsley.

Spread a layer of sauce on the bottom of a 13x9 pan. Cover with a layer of noodles. Spread some of ricotta mixture on top of noodles then add a little bit of sauce and mozzarella cheese and continue to layer noodles and aforementioned mixtures. Once to the top with mozzarella showing, add a layer of Parmesan cheese.

Cover with foil and bake at 375 for 25 minutes. Remove foil and continue baking for another 20 minutes. Cool for 15 minutes before serving.
