Glazed Cod With Broccoli and Barley Salad

This is one of those incredibly delicious and super easy meals that are on a taste and look level of 5 course meal but lazy level of just above a bowl of cereal. I usually don't add barley, but for my husband I needed some grain in this meal. 

And after all this is a perfect meal to impress and continue to celebrate Valentine's Day...


2 cod fillets
1/2 cup pearled barley
3 cloves of garlic
1 orange
1 lemon
1/2 pound of broccoli
1 tablespoon of white wine
1/4 teaspoon of crushed red pepper flakes
3 tablespoons of almonds
4 tablespoons of olive oil
1/4 + 2 tablespoons of water


Heat a medium pot of salted water to boiling.

Quarter the lemon, cut the broccoli into bite sized florets, peel and mince the garlic, roughly chop the almonds, and half the orange. Squeeze the juice of half of the orange into a bowl and remove the rind and dice the other half of the orange.

Add the barley to the pot of boiling water and cook uncovered for 25 minutes until tender. Drain and return to the pot. Add the juice of two lemon wedges.

In another pan, heat 2 tablespoons of olive oil and add the broccoli, mince the garlic (and add), and add the crushed red pepper flakes. Cook for 1 minute, stirring frequently.

Add 1/4 cup of water and stir until the water has cooked off and add the juice of the two remaining lemon wedges. Remove from heat.

Pat cod fillets dry and season with salt and pepper on both sides. In the same pan the broccoli was in, heat 2 tablespoons of olive oil on medium high until hot. Then add teh fillets and cook 4 minutes on the first side or until browned. Flip the fillets and add juice of the orange, wine, and 2 tablespoons of water. Continue cooking and spoon the glaze over the fillets and turn off the heat after two minutes.

Add cooked broccoli and diced orange to the barley. Divide onto plate and top with cod fillet and garnish with chopped almonds. Then enjoy!
