Low Carb Chicken Cordon Bleu

April coming around so fast this year was an April Fool's Joke in itself! I cannot believe how this year seems to be flying by!

I need to get my butt into gear to help myself be the best person I can be. That includes getting back into my love/hate relationship with low carb. I just need a little pick me up for my appearance. Sometimes you just gotta look good. Although we are all amazing, sometimes our outer appearance just doesn't reflect that. This Chicken Cordon Bleu is going through the same thing. Prepare for not the most beautiful looking dish in a picture, but an amazingly tasty one.

Like literally guys, I know I can't style and take food pictures to save my life, but there is really no help for this look. But I promise the flavor is bomb dot com.




Ingredients:

4 ounces of butter, melted
6 ounces of cream cheese, softened
1.5 tablespoons of spicy brown mustard
Juice of 1 lemon
1/2 teaspoon of salt
2 chicken breasts, cooked and shredded
8 pieces of deli meat (turkey or ham), diced
8 slices of cheddar cheese


Directions:

Preheat the oven to 350.

Mix together butter, cream cheese, mustard, lemon juice, and salt. Blend until you have a sauce. It will be thick!

In an oven safe baking dish (8x10 or 9x9) place shredded chicken at the bottom. Then layer with pieces of ham or turkey.

Layer with sauce and top with slices of cheddar cheese. Bake for 20 minutes and then serve!

  2. Okay, that sounds so delicious! We've been eating so clean, but that looks indulgent without being insanely over the top. I need to try it!
